Ripe avocado mashed onto a paste of onion, chile, cilantro and salt, kept chunky and finished with tomato and lime. Make it right before you eat it; it is a five-minute job.
Ingredients
- 3 ripe Hass avocados
- 1/4 cup finely chopped white onion
- 1 serrano chile, minced (keep the seeds for more heat)
- 1/4 cup chopped cilantro, divided
- 3/4 tsp kosher salt
- 1 roma tomato, seeded and diced
- 1 lime, juiced
- 1 bag (10 oz) tortilla chips, for serving
Steps
- In a molcajete or a sturdy bowl, mash the onion, serrano, half the cilantro and the salt into a rough paste with the pestle or a fork. This pulls the flavor out of the onion and chile.
- Halve the avocados, scoop them in, and mash coarsely, leaving plenty of chunks.
- Fold in the tomato, the rest of the cilantro and lime juice to taste.
- Taste and adjust the salt. Serve right away with chips. To hold it for an hour, press plastic wrap directly onto the surface.
