Honey Garlic Chicken Drumsticks
Mains · Serves 4 · Prep 5 min · Cook 35 min · Total 40 min
Drumsticks are cheap, hard to overcook and come with their own handle, which is exactly what a Tuesday needs. The sticky glaze goes on near the end so it turns glossy instead of scorching.
Ingredients
- 8 chicken drumsticks (about 2 1/2 lb), patted dry
- 1 tbsp vegetable oil
- 1 tsp kosher salt
- 1/2 tsp garlic powder
- 1/4 tsp black pepper
- 1/3 cup honey
- 3 tbsp low-sodium soy sauce
- 4 clove garlic, minced
- 1 tbsp butter
- 1 tsp rice vinegar or cider vinegar
- 1 green onion, thinly sliced, for serving (optional)
Steps
- Heat the oven to 425°F and line a rimmed sheet pan with foil for easy cleanup.
- Toss the drumsticks with the oil, salt, garlic powder and pepper and spread them out on the pan with space between each one. Roast for 20 minutes.
- While the chicken roasts, combine the honey, soy sauce, garlic, butter and vinegar in a small saucepan. Simmer over medium heat, stirring, until it thickens slightly and coats a spoon, 3 to 4 minutes.
- Brush half of the glaze over the drumsticks and roast for 10 minutes more.
- Brush on the rest of the glaze and roast until the glaze is sticky and the chicken reaches 175°F next to the bone, 5 to 7 minutes.
- Let the drumsticks rest for 5 minutes, spoon any glaze from the pan over the top, and scatter with green onion if you like.
